Mrs. Field's "There's-Is-No-Such-Thing-As-Too-Much-Chocolate-Pie"




1 1/4    cups chocolate chocolate chip cookie crumbs (about 7 or 8 cookies, divided

1/4       cup butter, melted

2 1/2    cups heavy or whipping cream

2          cups semisweet chocolate chips

1/2       cup sugar, divided

2          eggs

3           teaspoons vanilla extract, divided

1/4        teaspoon salt


In a medium bowl, combine 1 cup of cookie crumbs and melted butter.  Press into a 9" square pan.  Refrigerate until ready to use.   In a blender, combine the chocolate chips, 1/4 cup of sugar, 2 eggs, 2 teaspoons vanilla and salt.  In a small saucepan, heat 1 1/2 cups of cream just to boiling.  Add hot cream to blender and process until smooth (about 1 minute).  Pour into prepared pan.  Refrigerate at least 1 hour.  prior to serving, combing remaining 1 cup of cream, remaining 1/4 cup of sugar and 1 teaspoon of vanilla in a mixing bowl.  Beat until stiff peaks form.  Spread over chocolate mixture.  Sprinkle on reserved 1/4 cup of chocolate chip cookie crumbs.  Cut into 12 pieces.  Approximately 500 calories each :-)
