Zucchini Chile Cheese Casserole
3/4 to 1 lb. zucchini, cut and steamed until barely tender, cooled
¼ tsp salt
1 ½ Tblsp flour
½ lb Jack cheese, shredded
1 4 oz can chopped chiles (I like jalepenos, but result is very hot!)
1/6 c chopped parsely (I mix with cilantro)
bread crumbs (I used panko)
Mix all ingredients except crumbs and butter.
Butter casserole and coat with crumbs. Add mixture. Cover with crumbs and dot with butter. Bake @ 350 for an hour.
